60g (120g) butter
70g (140g) plain flour

240ml water
120ml milk
180g butter
210g plain flour
1½ pinches salt

Number of Cheese Puffs: 40Ingredients:
140g Gruyere cheese
8 eggs
320ml water
160ml milk
240g butter
280g plain flour
2 pinches salt
2 eggs for glazing
Method (all Magimix Food Processor models):
- Preheat oven to 210 deg C (gas mark 6/7).
- Lightly butter a baking tray.
- Grate the cheese into the bowl using the 2mm disc and set aside.
- Add the water, milk, butter and salt to a saucepan.
- Bring to the boil whilst stirring with a whisk to melt the butter.
- Remove from heat.
- Tip in all the flour, stirring vigorously with a wooden spoon.
- Return to the heat and simmer for approximately 1 minute.
- Transfer resultant dough to bowl fitted with dough hook.
- Switch on and add eggs one by one via feed tube.
- Switch off.
- Use spatula to scrape side of bowl and push dough down.
- Add ¾ of the grated cheese.
- Blend for 5 seconds.
- Pour a little water onto baking tray.
- Pipe or spoon dough mixture in small mounds, each of about 30mm in diameter.
- Brush with beaten egg yolk, flatten slightly, and scatter with remaining cheese.
- Bake for approximately 20 minutes.
- Leave to cool on a wire tray.
- Serve warm.
