2 aubergines
2 garlic cloves
4 tbsp olive oil
2 tbsp lemon juice
Coarse salt to taste
Salt and pepper to taste
Method (all models):
- Preheat oven to 180 degC (gas mark 4).
- Wash and dry aubergines.
- Prick aubergines with fork.
- Arrange aubergines in oven dish lined with coarse salt.
- Bake for approx 45 minutes until skin is soft and flesh tender.
- Leave to cool.
- Slice garlic cloves in half, discard central shoots.
- Cut aubergines in half.
- Scoop out fleah with a spoon.
- Put the garlic and aubergines in the mini bowl.
- Add remaining ingredients.
- Pulse a dozen or so times until mixture is smooth.
