60g (100g) butter
1 (2) tarragon sprigs
1 (2) egg yolks
60ml (100ml) vinegar

4 shallots
200g butter
4 tarragon sprigs
4 egg yolks
200ml vinegar
Salt and pepper to taste
Method (all models):
- Chop shallot(s) and tarragon in the mini bowl, using 4 to 5 pulses.
- Add vinegar to the resulting mixture.
- Pour into a thick-bottomed saucepan.
- Add salt and pepper.
- Reduce over a low heat to about half the original volume.
- Pour the reduction into the mini bowl.
- Add egg yolks and pulse 3 times.
- Add diced butter.
- Pulse 5 to 6 times until sauce reaches the right consistency.
Serve with grilled red meat.
