400ml (500ml) water
100ml creme fraiche
45g butter
3 egg yolks
2 tbsp mustard

Ingredients:
800g oyster mushrooms
2 chicken stock cubes
400ml (500ml) water
100ml creme fraiche

3 tbsp mustard
Method (all Magimix Food Processor models):
- Wash and slice mushrooms.
- Melt butter in large pan.
- Add mushrooms.
- Cook for time indicated for your food processor above.
- Add stock cubes.
- Add water.
- Simmer gently.
- Strain mushrooms, retaining the stock.
- Blend in bowl with metal blade.
- Add egg yolks, creme fraiche and mustard via the feed tube.
- Pour in hot stock and stir well.
