300ml single cream
3 tbsp olive oil
750ml water

2 bunches watercress
2 onions
8 potatoes
400ml single cream
4 tbsp olive oil
1000ml water
Salt and pepper to taste
Method (all Magimix Food Processor models):
- Slice onion with 2mm slicing disc.
- Transfer to large pan.
- Soften in a little olive oil over a low heat.
- Peel and slice the potatoes.
- Sort watercress, discarding thick stalks.
- When onions start to brown, add potatoes and watercress.
- Fry gently for a few minutes.
- Add water and cook.
- Strain vegetables (keep the cooking water).
- Blend in bowl with metal blade.
- Gradually add cooking water via the feed tube.
- Add cream via the feed tube.
- Season to taste.
