1000g carrots
3 oranges
1½ onions
3 chicken stock cubes
800ml water
1½ tbsp acacia honey
1½ tsp ground cumin
olive oil to taste
salt and pepper to taste
MAGIMIX 5200:
Serves: 8
Preparation Time: 40 minutes
Cooking Time: 25 minutes
Ingredients:
1300g carrots
4 oranges
2 onions
4 chicken stock cubes
1000ml water
2 tbsp acacia honey
2 tsp ground cumin
olive oil to taste
salt and pepper to taste
Method (all Magimix Food Processor models):
- Dilute stock cubes into heated water.
- Peel carrots and slice in midi bowl using 4mm slicing disc.
- Cook in the stock.
- Add a strip of orange peel to the cooking carrots.
- Peel onions and chop in mini bowl.
- Fry in a little olive oil and set aside.
- Strain cooked carrots, reserving the stock.
- Place carrots, onions, salt and pepper in bowl with metal blade fitted.
- Blend and add stock via the feed tube.
- Allow to cool.
- Squeeze oranges using the citrus press.
- Pour juice into the cold carrot soup.
- Add cumin and acacia honey.
- Stir well.
- Chill for at least 3 hours before serving.
