Ingredients:

2 potatoes
2 garlic cloves
1 onion
1 bouquet garnis
150g mascarpone
800ml water
5 tbsp olive oil
3 pinches ground ginger
cayenne pepper & salt to taste
MAGIMIX 5200:
Serves: 8
Preparation Time: 30 minutes
Cooking Time: 35 minutes
Ingredients:
6 red peppers
2½ potatoes
2 garlic cloves
1½ onions
2 bouquets garnis
200g mascarpone
1000ml water
6 tbsp olive oil
4 pinches ground ginger
cayenne pepper & salt to taste
Method (all Magimix Food Processor models):
- Peel potatoes and onions.
- De-seed peppers.
- Slice using 4mm slicing disc.
- Fry the onion in a little olive oil in a large pan over a low heat for 2 minutes.
- Add the peppers and garlic and cook for 10 minutes, stirring constantly.
- Pour in the water with a little salt.
- Add potatoes, ginger, bouquet garni.
- Simmer gently for the prescribed Cooking Time.
- Discard bouguet garni.
- Strain the vegetables reserving the cooking water.
- Blend with mascarpone and olive oil in bowl fitted with metal blade.
- Gradually add the cooking water via the feed tube.
- Season with cayenne pepper.
- Chill for at least 3 hours before serving.
When ready to serve, dust with a little paprika.
