1 green pepper

100g black olives

Ingredients:
650g tomatoes
3 red peppers
2 green pepper
3 courgettes
2 aubergines
150g black olives
10 garlic cloves
thyme, basil to taste
olive oil to taste
salt and pepper to taste
Method (all models):
- Preheat oven to 210°C (gas mark 6/7).
- Wash and dry tomatoes, courgettes and aubergines.
- Slice separately using 4mm slicing disc.
- Wash, de-seed and slice peppers.
- Arrange alternate layers of tomatoes, aubergines, courgettes, peppers and unpeeled garlic cloves in an oven dish.
- Scatter with black olives, thyme and snipped basil leaves.
- Drizzle liberally with olive oil.
- Season with salt and pepper.
- Bake in oven for prescribed time, remembering to add a glass of water midway through to prevent vegetables from drying out.
