Vegetable Pizza

Serves: 2 to (4)
Preparation Time: 10 minutes
Cooking Time: 50 minutes
Ingredients:
½ (1) courgette
2 (4) tomatoes
1 (2) onions
1 (1) mozzarella cheese
2 tbsp (3 tbsp) passata
30g (50g) flaked almonds
4 (5) basil leaves
olive oil to taste
chilli oil to taste

Ingredients:
2 courgettes
5 tomatoes
3 onions
2 mozzarella cheeses
4 tbsp passata
75g flaked almonds
7 basil leaves
olive oil to taste
chilli oil to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 20 minutes
Cooking Time: 1 hour
Ingredients:
2½ courgettes
6 tomatoes
3 onions
2 mozzarella cheeses
5 tbsp passata
100g flaked almonds
8 basil leaves
olive oil to taste
chilli oil to taste

Method (all models):

  1. Make pizza dough as per Pizza Dough Recipe
  2. Wash and slice vegetables and onions using the 2mm slicing disc.
  3. Cut mozzarella into quarters and chop in mini bowl.
  4. Preheat oven to 210°C (gas mark 6/7).
  5. Fry the sliced onions in a frying pan with a dash of olive oil.
  6. Roll out the pizza dough on a floured surface and prick lightly with a fork.
  7. Cover the dough with a layer of passata, onions, sliced tomatoes (drain first) and diced mozzarella.
  8. Add courgettes and flaked almonds.
  9. Season between each layer with salt and pepper.
  10. Drizzle with olive oil.
  11. bake until dough is golden.
  12. Take out of oven and scatter with fresh basil and sprinkle lightly with chilli oil.
