Mayonnaise


MAGIMIX 3200:
Serves: 2 to (4)
Preparation Time: 5 minutes
Ingredients:
1 (2) egg yolks
1 (1½) tsp English mustard
150 (300)ml olive oil
1 (2) tsp vinegar
Salt and pepper to taste

MAGIMIX 4200:
Serves: 6
Preparation Time: 7 minutes
Ingredients:
3 egg yolks
2 tsp English mustard
450ml olive oil
3 tsp vinegar
Salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 7 minutes
Ingredients:
4 egg yolks
2½ tsp English mustard
600ml olive oil
4 tsp vinegar
Salt and pepper to taste

Method (all models):
  1. Put egg yolks, mustard and a teaspoon of the oil in the mini bowl.
  2. Blend for 20 seconds.
  3. Slowly drizzle half the remaining oil through the feed tube.
  4. Increase flow of oil as the mixture thickens.
  5. Add salt and pepper.
  6. With processor still running, pour in the rest of the oil.
  7. At the very last minute, add the vinegar.
Important notes:
  • All ingredients must be at room temperature.
  • Use whole eggs to achieve a softer consistency.
