Herb Mayonnaise

MAGIMIX 3200:
Serves: 2 to (4)
Preparation Time: 5 minutes
Ingredients:
1 (2) shallots
60g (100g) butter
1 (2) tarragon sprigs
1 (2) egg yolks
60ml (100ml) vinegar
Salt and pepper to taste

MAGIMIX 4200:
Serves: 6
Preparation Time: 7 minutes
Ingredients:
3 shallots
150g butter
3 tarragon sprigs
3 egg yolks
150ml vinegar
Salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 7 minutes
Ingredients:
4 shallots
200g butter
4 tarragon sprigs
4 egg yolks
200ml vinegar
Salt and pepper to taste

Method (all models):
  1. Chop shallot(s) and tarragon in the mini bowl, using 4 to 5 pulses.
  2. Add vinegar to the resulting mixture.
  3. Pour into a thick-bottomed saucepan.
  4. Add salt and pepper.
  5. Reduce over a low heat to about half the original volume.
  6. Pour the reduction into the mini bowl.
  7. Add egg yolks and pulse 3 times.
  8. Add diced butter.
  9. Pulse 5 to 6 times until sauce reaches the right consistency.

Serve with grilled red meat.
