Pastry Cream

Serves: 2 to (4)
Preparation Time: 10 minutes
Cooking Time: 5 minutes
250ml (350ml) milk
50g (80g) caster sugar
25g (35g) plain flour
2 (3) eggs yolks
1 vanilla pod

Cooking Time: 10 minutes 
500ml milk 100g caster sugar
50g plain flour
4 eggs yolks
1 vanilla pod

Serves: 8
Preparation Time: 20 minutes
Cooking Time: 15 minutes 
700ml milk
160g caster sugar
70g plain flour
6 eggs yolks
2 vanilla pods

Method (all models):
  1. Set aside a glass of cold milk.
  2. Pour the rest of the milk into a saucepan.
  3. Add the split vanilla pods.
  4. Bring to the boil.
  5. Put the sugar, flour and egg yolks in the bowl with the metal blade.
  6. Pulse twice.
  7. Add the glass of milk via the feed tube.
  8. Pulse twice again.
  9. Remove the vanilla pods from the hot milk.
  10. Scrape out seeds and add back to the milk.
  11. Start processor.
  12. Pour the milk very gradually into the preparation.
  13. Return everything to the saucepan and simmer gently, stirring with a wooden spatula.
  14. Remove from heat as soon as cream starts to coat the spatula.
  15. Pour into a large bowl.
  16. Sprinkle with caster sugar to prevent skin forming.
  17. Leave to cool.
You can use this cream to fill pastry puffs or eclairs.
