Anchovy Paste

Serves: 2 to (4)
Preparation Time: 10 minutes
Ingredients:
150g (200g) anchovies in olive oil
1½ (2) garlic cloves
1 tbsp balsamic vinegar
1 bread slice
5 tbsp (6 tbsp) creme fraiche
Pepper to taste

Preparation Time: 10 minutes
Ingredients:
300g anchovies in olive oil
3 garlic cloves
1½ tbsp balsamic vinegar
2 bread slices
9 tbsp creme fraiche
Pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 10 minutes
Ingredients:
360g anchovies in olive oil
4 garlic cloves
2 tbsp balsamic vinegar
2 bread slices
11 tbsp creme fraiche
Pepper to taste

Method (all models):
  1. Drain anchovies on kitchen paper.
  2. Soak bread slices in milk and squeeze out surplus.
  3. Put anchovies, bread, garlic (discard central shots), vinegar and pepper in the mini bowl.
  4. Blend for approximately 30 seconds to obtain a paste.
  5. With processor running for another 20 seconds or so, gradually add the creme fraiche via the feed tube until completely absorbed.
Delicious with raw vegetables.
