Aubergine Caviar

Serves: 2 to (4)
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Ingredients:
½ (1) aubergine
½ (1) garlic clove
1 tbsp (2 tbsp) olive oil
2 tsp (1 tbsp) lemon juice
Coarse salt to taste
Salt and pepper to taste

Ingredients:
1½ aubergines
1½ garlic cloves
3 tbsp olive oil
1½ tbsp lemon juice
Coarse salt to taste
Salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Ingredients:
2 aubergines
2 garlic cloves
4 tbsp olive oil
2 tbsp lemon juice
Coarse salt to taste
Salt and pepper to taste

Method (all models):
  1. Preheat oven to 180 degC (gas mark 4).
  2. Wash and dry aubergines.
  3. Prick aubergines with fork.
  4. Arrange aubergines in oven dish lined with coarse salt.
  5. Bake for approx 45 minutes until skin is soft and flesh tender.
  6. Leave to cool.
  7. Slice garlic cloves in half, discard central shoots.
  8. Cut aubergines in half.
  9. Scoop out fleah with a spoon.
  10. Put the garlic and aubergines in the mini bowl.
  11. Add remaining ingredients.
  12. Pulse a dozen or so times until mixture is smooth.
Scatter with chopped black olives and serve with toasted slices of country loaf.
