Roille Sauce

MAGIMIX 3200:
Serves: 2 to (4)
Preparation Time: 5 minutes
Ingredients:
1 (2) tsp garlic paste
1 (2) egg yolks
200ml (300ml) olive oil
1 tbsp tomato puree
1g powdered saffron
1 pinch cayenne pepper
Salt and pepper to taste

MAGIMIX 4200:
Serves: 6
Preparation Time: 7 minutes
Ingredients:
3 tsp garlic paste
3 egg yolks
450ml olive oil
1½ tbsp tomato puree
2g powdered saffron
1 pinch cayenne pepper
Salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 7 minutes
Ingredients:
4 tsp garlic paste
4 egg yolks
2 tbsp tomato puree
2g powdered saffron
2 pinches cayenne pepper
Salt and pepper to taste

Method (all models):
  1. Place garlic paste into mini bowl
  2. Add egg yolk(s), saffron and cayenne pepper
  3. Season lightly with salt and pepper
  4. Blend for 20 seconds
  5. Slowly drizzle in the olive oil via the feed tube
  6. Add the tomato pure via the feed tube
  7. Pulse a few times to obtain a smooth consistency

Important note:
Eggs should be at room temperature.

Serve with Mediterranean fish stew (bouillabaisse), fried or poached fish and fish soup.
