Oyster Mushroom Soup

Serves: 2 to (4)
Preparation Time: 15 minutes
Cooking Time: 15 (20) minutes
Ingredients:
350g (650g) oyster mushrooms
1 (1½) chicken stock cubes
400ml (500ml) water
40ml (75ml) creme fraiche
15g (30g) butter
1 (2) egg yolks
1tbsp (1½tbsp) mustard

Preparation Time: 20 minutes
Cooking Time: 30 minutes
800g oyster mushrooms
2 chicken stock cubes
400ml (500ml) water
100ml creme fraiche
45g butter
3 egg yolks
2 tbsp mustard

MAGIMIX 5200:
Serves: 8
Preparation Time: 720 minutes
Cooking Time: 30 minutes
Ingredients:
800g oyster mushrooms
2 chicken stock cubes
400ml (500ml) water
100ml creme fraiche
45g butter
3 egg yolks
3 tbsp mustard

Method (all Magimix Food Processor models):
  1. Wash and slice mushrooms.
  2. Melt butter in large pan.
  3. Add mushrooms.
  4. Cook for time indicated for your food processor above.
  5. Add stock cubes.
  6. Add water.
  7. Simmer gently.
  8. Strain mushrooms, retaining the stock.
  9. Blend in bowl with metal blade.
  10. Add egg yolks, creme fraiche and mustard via the feed tube.
  11. Pour in hot stock and stir well.
Oyster mushroom soup is delicious served with diced bacon and slices of toast.
