Watercress Soup

Serves: 2 to (4)
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
½ (1) bunch watercress
½ (1) onion
2 (4) potatoes
100ml (200ml) single cream
1tbsp (2 tbsp) olive oil
250ml (500ml) water
Salt and pepper to taste

Ingredients:
1½ bunches watercress
1½ onions
6 potatoes
300ml single cream
3 tbsp olive oil
750ml water
Salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 30 minutes
Cooking Time: 30 minutes
Ingredients:
2 bunches watercress
2 onions
8 potatoes
400ml single cream
4 tbsp olive oil
1000ml water
Salt and pepper to taste

Method (all Magimix Food Processor models):
  1. Slice onion with 2mm slicing disc.
  2. Transfer to large pan.
  3. Soften in a little olive oil over a low heat.
  4. Peel and slice the potatoes.
  5. Sort watercress, discarding thick stalks.
  6. When onions start to brown, add potatoes and watercress.
  7. Fry gently for a few minutes.
  8. Add water and cook.
  9. Strain vegetables (keep the cooking water).
  10. Blend in bowl with metal blade.
  11. Gradually add cooking water via the feed tube.
  12. Add cream via the feed tube.
  13. Season to taste.
