Chilled Pepper and Mascarpone Soup

Serves: 2 to (4)
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
2 (3) red peppers
½ (1) potato
½ (1) garlic clove
½ onion
½ (1) bouquet garnis
50g (100g) mascarpone
400ml (600ml) water
2 tbsp (3 tbsp) olive oil
1 (2) pinches ground ginger
cayenne pepper & salt to taste

MAGIMIX 4200:
Serves: 6
Preparation Time: 30 minutes
Cooking Time: 35 minutes
Ingredients:
4 red peppers
2 potatoes
2 garlic cloves
1 onion
1 bouquet garnis
150g mascarpone
800ml water
5 tbsp olive oil
3 pinches ground ginger
cayenne pepper & salt to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 30 minutes
Cooking Time: 35 minutes
Ingredients:
6 red peppers
2½ potatoes
2 garlic cloves
1½ onions
2 bouquets garnis
200g mascarpone
1000ml water
6 tbsp olive oil
4 pinches ground ginger
cayenne pepper & salt to taste

Method (all Magimix Food Processor models):

  1. Peel potatoes and onions.
  2. De-seed peppers.
  3. Slice using 4mm slicing disc.
  4. Fry the onion in a little olive oil in a large pan over a low heat for 2 minutes.
  5. Add the peppers and garlic and cook for 10 minutes, stirring constantly.
  6. Pour in the water with a little salt.
  7. Add potatoes, ginger, bouquet garni.
  8. Simmer gently for the prescribed Cooking Time.
  9. Discard bouguet garni.
  10. Strain the vegetables reserving the cooking water.
  11. Blend with mascarpone and olive oil in bowl fitted with metal blade.
  12. Gradually add the cooking water via the feed tube.
  13. Season with cayenne pepper.
  14. Chill for at least 3 hours before serving.

When ready to serve, dust with a little paprika.
