Cold Carrot Soup

Serves: 2 to (4)
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Ingredients:
350g (700g) carrots
1 (2) oranges
½ (1) onion
1 (2) chicken stock cubes
400ml (650ml) water
½ (1) tbsp acacia honey
½ (1) tsp ground cumin
olive oil to taste
salt and pepper to taste

MAGIMIX 4200:

Cooking Time: 25 minutes
Ingredients:
1000g carrots
3 oranges
1½ onions
3 chicken stock cubes
800ml water
1½ tbsp acacia honey
1½ tsp ground cumin
olive oil to taste
salt and pepper to taste

MAGIMIX 5200:
Serves: 8
Preparation Time: 40 minutes
Cooking Time: 25 minutes
Ingredients:
1300g carrots
4 oranges
2 onions
4 chicken stock cubes
1000ml water
2 tbsp acacia honey
2 tsp ground cumin
olive oil to taste
salt and pepper to taste

Method (all Magimix Food Processor models):
  1. Dilute stock cubes into heated water.
  2. Peel carrots and slice in midi bowl using 4mm slicing disc.
  3. Cook in the stock.
  4. Add a strip of orange peel to the cooking carrots.
  5. Peel onions and chop in mini bowl.
  6. Fry in a little olive oil and set aside.
  7. Strain cooked carrots, reserving the stock.
  8. Place carrots, onions, salt and pepper in bowl with metal blade fitted.
  9. Blend and add stock via the feed tube.
  10. Allow to cool.
  11. Squeeze oranges using the citrus press.
  12. Pour juice into the cold carrot soup.
  13. Add cumin and acacia honey.
  14. Stir well.
  15. Chill for at least 3 hours before serving.
Just before serving, shred a large carrot using the shredding disc, or the 4mm grating disc. Pour chilled soup into plates. Place a small mound of shredded carrot in the middle and decorate with a few basil leaves. For a milder soup, add a little creme fraiche.
